Beni shoga is a condiment of Japanese origin, prepared from red ginger thinly chopped and marinated in rice vinegar.
It is traditionally coloured with red shiso leaves or any other vegetable and often served as an aperitif in Japanese izakaya breweries.
But it's really on fried dishes that it works wonders: as a topping for okonomiyaki pancakes, takoyaki octopus dumplings and yakisoba fried noodles, not to mention light tempura frying.
