Sauce for preparing two Korean meat specialities, bulgogi and kalbigi.

Kalbi

Kalbi (or galbi - often with the suffix gi) is a traditional Korean dish consisting of marinated and grilled beef ribs. The word kalbi means rib in Korean.

The dish is prepared by marinating the beef ribs in a sauce made from soy sauce, garlic, sesame seeds and often other ingredients such as ginger or rice wine. After marinating, the meat is usually grilled, often on a barbecue, until caramelised and tender.

Kalbi is often served with rice or marinated vegetables such as kimchi.

Bulgogi

Bulgogi is an emblematic dish of Korean cuisine, consisting of thin slices of marinated and grilled beef. The name 'bulgogi' literally means 'meat over fire' in Korean, reflecting the dish's traditional cooking method.

The marinade for bulgogi is similar to that for kalbi, it's mainly the meat used that changes. Once the meat has been marinated, it is cooked quickly at a high temperature, either on a grill or in a pan.

Like kalbi, bulgogi is often served with rice or marinated vegetables.

Ingredients

Soy sauce (water, soy, wheat, salt, alcohol, high fructose corn syrup, yeast and liquorice extract, sucralose E955), water, sugar, corn syrup, garlic, rice wine, kiwi puree, ginger, wheat extract, salt, sesame oil, black pepper powder, soy peptide concentrate, xanthan gum E415, E631, E627, colour: E150a caramel pigment, oleoresin capsicum.

Preparation of the kalbi:

190g sauce, 1kg beef ribs, 3cm white radish, 50g carrots, 200g onion, 1l water.

  1. Blanch the beef in boiling water and set aside.
  2. Add the sauce, 1l water and beef to a saucepan and boil for 45min.
  3. Add the vegetables and cook for 45min.

To prepare the bulgogi

190g sauce, 500g beef, 200g onion, 50g green onion, 50g carrots.

  1. Cut the beef into thin slices and marinate in the sauce for 10 minutes.
  2. Cut the vegetables into thin slices.
  3. Grill all the ingredients in a pan, starting with the meat.
