An age-old recipe for candied azuki beans

Imuraya 井村屋, one of Japan's most renowned confectioners, has been producing a wide range of desserts with a distinctly Japanese flavour since 1896 in Mié.

Here is a sweet soup made with Anko paste, rich in red azuki beans from Hokkaidô, with two soft little mochis, for very sweet, traditional Japanese flavours.

A must-have Japanese sweet treat

Known as zenzai in Kansai, the Osaka region, azuki beans are kept whole, and oshiruko in Kanto, the Tokyo region, where they are preferred in a sieved purée. A little mochi is a welcome garnish to this delicious sweet soup, adding a touch of white on a red background, an inseparable pair of colours emblematic of Japan.

Ingredients

Preparation tips :


1. Half-open the lid

2. Remove the mochi. Pour the sachet of zenzai soup into the bowl. Press the mochi into the soup.

3. Close the lid

4. Heat in the microwave at 600W 1min20 or 900W 1min40

5. Take the bowl out and wait 1 minute

    Stir well: it's ready!

     Note: if the mochi is still too firm, put it back in the microwave for 10 seconds.
